Peanut Butter and Jam Cupcakes
 

Ingredients
  • 1 pkg white cupcake mix
  • Steeped Tea Strawberry Rhubarb, Cinnamon Pear or Blackcurrant jam
  • Peanut butter frosting (see below)
  • Frosting:
  • 1 cup powdered sugar
  • ¾ cup creamy peanut butter (do not use old-fashioned or freshly ground)
  • ¼ cup unsalted butter, room temperature
  • ¼ tsp vanilla extract
  • 4 tsp whipping cream (optional)

Instructions
  1. Prepare cupcake mix according to the package instructions.
  2. After baking, let them cool.
  3. Split the cupcakes n half and spread each one with a thick layer of jam.
  4. Put the tops back on and spread with peanut butter icing.
