Steeped Tea Honey, Ginger & Raisin Scones Recipe

Honey, Ginger & Raisin Scones
 

Ingredients
  • 1 pkg Steeped Tea Infamous Scone Mix
  • ½ tsp ground ginger
  • ½ tsp baking soda
  • 3 tbsp honey
  • 2 tbsp white vinegar
  • ¼ cup butter
  • ½ cup raisins or golden raisins
  • ¼ cup candied ginger (finely chopped)
  • ¾ cup 18% cream (we usually use 10%)
  • 1 egg yolk
  • Glaze:
  • 2 tbsp 18 or 10% cream
  • 1 tsp honey

Instructions
  1. Combine baking soda and ground ginger to Steeped Tea Infamous Scone Mix.Cut butter in small pieces and use a pastry blender or fingers to work in butter to flour mixture. Add raisins and candied ginger.
  2. In small pan, heat honey, ¾ cup cream and stir until well blended.
  3. Remove from heat and add vinegar and egg yolk.You can also add extracts at this time. Stir to combine.
  4. Add wet mixtue to dry and stir until dough holds together.
  5. Roll dough into a circle about 1½ inch thick.
  6. Cut dough with a sharp knife until 8 equal pieces and place on parchment paper in baking pan or cookie sheet.
  7. Mix 2 tbsp of cream with 1 tsp honey.
  8. Brush top of each scone.
  9. Bake at 375F for about 15 minutes until tops are golden.
