Combine baking soda and ground ginger to Steeped Tea Infamous Scone Mix.Cut butter in small pieces and use a pastry blender or fingers to work in butter to flour mixture. Add raisins and candied ginger.
In small pan, heat honey, ¾ cup cream and stir until well blended.
Remove from heat and add vinegar and egg yolk.You can also add extracts at this time. Stir to combine.
Add wet mixtue to dry and stir until dough holds together.
Roll dough into a circle about 1½ inch thick.
Cut dough with a sharp knife until 8 equal pieces and place on parchment paper in baking pan or cookie sheet.
Mix 2 tbsp of cream with 1 tsp honey.
Brush top of each scone.
Bake at 375F for about 15 minutes until tops are golden.
